Alex shows how to create a quick, crowd-pleasing Chorizo and Corn Cob Loaf, paired with a refreshing festive drink, using Westinghouse appliances to make Christmas cooking easy, fun, and stress-free.


INGREDIENTS:

  • 200g cottage cheese
  • 100g sour cream
  • 1 cup grated cheese
  • Salt
  • Pepper
  • Chives
  • Onion powder
  • 2 chorizos
  • 1 cup of corn
  • 2 tbsp honey
  • 150g butter
  • Smoked paprika and chopped chives for garnish

METHOD:

  • In a large microwave safe bowl, mix sour cream and both cheeses.
  • Microwave for 2 minutes until warm.
  • Add oil to a pan and fry off chopped chorizo until caramelized.
  • Add corn to the pan to warm up.
  • Add chorizo mix into the cheese mixture.
  • Remove bread top with a sharp bread knife.
  • Hollow out the inside and keep large bread chunks for dipping.
  • Brush bread with melted honey butter mix. (Microwave honey and butter together).
  • Spoon cheese and chorizo mix into the well in the loaf, brush the lid of the loaf with honey butter, and toss the bread chunks in the left-over honey butter.
  • Place all in an air fryer for 5 minutes on 180C or until golden brown.

BONUS TIP:

  • Sprinkle on extra cheese, smoked paprika and chives before serving!
