Alex shows how to create a quick, crowd-pleasing Chorizo and Corn Cob Loaf, paired with a refreshing festive drink, using Westinghouse appliances to make Christmas cooking easy, fun, and stress-free.
INGREDIENTS:
- 200g cottage cheese
- 100g sour cream
- 1 cup grated cheese
- Salt
- Pepper
- Chives
- Onion powder
- 2 chorizos
- 1 cup of corn
- 2 tbsp honey
- 150g butter
- Smoked paprika and chopped chives for garnish
METHOD:
- In a large microwave safe bowl, mix sour cream and both cheeses.
- Microwave for 2 minutes until warm.
- Add oil to a pan and fry off chopped chorizo until caramelized.
- Add corn to the pan to warm up.
- Add chorizo mix into the cheese mixture.
- Remove bread top with a sharp bread knife.
- Hollow out the inside and keep large bread chunks for dipping.
- Brush bread with melted honey butter mix. (Microwave honey and butter together).
- Spoon cheese and chorizo mix into the well in the loaf, brush the lid of the loaf with honey butter, and toss the bread chunks in the left-over honey butter.
- Place all in an air fryer for 5 minutes on 180C or until golden brown.
BONUS TIP:
- Sprinkle on extra cheese, smoked paprika and chives before serving!
