Trevor visits Limeburners and tastes some local and unusual bourbons and whiskeys.

  • The Great Southern company is home to the founder Cameron Syme. They’re also home to an interesting heritage that will capture your mind and heart. Accompanied by a briming food scene of craft breweries coming up. Cameron being one of those, spending 16 years in Albany curating Limeburners class whiskey.
  • Cameron created his first distillation on Christmas Eve in 2005, from a 150m2 space in the Albany Small Business incubator, with Limeburners Single Malt being his first whisky that launched soon after in 2008.
  • By 2007 Limeburners had outgrown its original market, which they then opened a new distillery at Frenchman Bay Road, where they currently reside.
  • The site, now Limeburners & Giniversity, has now franchised, including Ginviersity Gin, Tiger Snake Australian Whiskey and Dugite Whiskey. Giniversity Gins Pay homage to the natural aromas and flavours of Margeret River, in which they are located.
  • Tiger Snake Sour Mash Whiskey is a uniquely Australian take on the American bourbon, being Australia’s first mixed grain whiskey where Cameron was initially inspired by the great bourbons of Kentucky and Tennesse in his youth.
  • 2024 will see the release of their first ‘age statement’ whiskies – a 12-year-old and 18-year-old single malt Whisky. Further cementing Limeburners as Western Australia’s finest and most celebrated luxury spirits producer
